Baked Lemon Swordfish

If you know me at all, you will remember, I love lemon, don’t you?  There is something about the tangy flavor of a lemon that makes everything better. From cakes, cookies and even when cooking fresh fish. And that’s why I love my Baked Lemon Swordfish.  It comes out tender, moist and the lemony flavor is just perfect.

The real key to this recipe is that the fish is wrapped in foil and baked in the oven.  

 

Baked-Lemon-Swordfish

 {Meegan’s Baked Lemon Swordfish Recipe}

Preheat oven to 375*

1 fresh swordfish steak

 1-12″ x12″ piece of foil brushed with olive oil.

Place steak on foil.

Season with salt and pepper

Sprinkle 1/4 tsp Lemon Pepper

Add 1 Tablespoon Butter pat onto steak.

Place fresh lemon slice on butter pat.

Sprinkle with 1 Tablespoon fresh parsley

Wrap foil up tightly, so it won’t “leak”.  

But leave room so the swordfish can “breath” and steam.

Bake for 16-18 minutes or until fully cooked, depending on thickness of your steak.

*This same recipe can be used on your grill for Spring and Summer cooking.

Garnish with a slice of fresh lemon and fresh parsley for color.

Lemon-Baked-Swordfish

I like to serve my Baked Lemon Swordfish with a fresh green salad and/or Jasmine Rice…Nummers!

Have YOU ever tried Jasmine rice? It REALLY is my favorite rice. You can buy it whole grain or brown. The brown jasmine rice is my favorite. It is hearty and flavorful. A perfect balance with the Baked Lemon Swordfish.
