Happy Thursday! It’s nice to be with you on the hot, humid day. It has been hot and rainy most of the week here in Vegas. Don’t get me wrong-I LOVE the Summer rain. BUT, it does keep me out of the pool with the lightening storms. Boo!
One good thing about the weather is that I crave fresh veggies and fruit. What your favorite Summer “go-to” recipe? Mine is Summer Cole Slaw with Poppy Seed Dressing and Cashews. Yummy!
This recipe is fresh, crisp, sweet and salty all in one bite.
I got this recipe from my friend Stephanie. She brought it to a party and all of us attending went crazy over it. It has been a “go to” Summer recipe for me ever since.
Summer Cole Slaw with Poppy Seed Dressing and Cashews
1-head shredded cabbage
3-grated large carrots
1-bottle Brianna’s Poppy Seed Dressing (OR the Poppy Seed Dressing of your choice)
1-cup salted cashews
Toss well and keep chilled until served
This recipe is great for Summer gathering, pool parties, or even as a mid-day snack. It’s also a way to get your veggies in for the day.
