Be Carton Smart Thanksgiving Sandwich

Today I have a special treat and idea for you.
Did you realize how many amazing food products for your holiday meals you can get in a carton?  Whether you are making pumpkin pie, green been casserole, or simply want an easy way to dress up the must-have cranberry loaf on the table.

I tried by making the small, smart choice using foods packed in Tetra Pak cartons.  They are pantry staples for those that enjoy living smart:
• Tetra Pak® cartons are made of 70% paper, a renewable resource, from selectively harvested, re-grown trees that are FSC-certified (Forest Stewardship Council)
• Cartons use 1/3 of the packaging compared to cans…or even an egg!
• Cartons are space saving, easy to store and open. Keep your pantry neat and toss your can openers. , stackable and space saving.
• The unique packaging process preserves the flavor and nutrients of food without the use of preservatives.Product quality is exactly the way it was intended to be.
• Recycleable and in fact result in 60% less landfill waste than cans

With the Holiday Season upon us, one of my favorite go to dishes is a “Thanksgiving sandwich”.  Swapping one of the ingredients with an item from Pacific Foods , I won’t have the tinny taste, less waste, and no preservatives.

To begin my “Thanksgiving ” sandwich I needed to make dressing or stuffing.  I used the Pacific Organic Unsalted Chicken Stock

Instead of the sodium filled powder cube.  You can see that the dressing looks delicious and fresh, without compromising the flavor.
To put my sandwich together, I used an organic multi grain bread, fresh deli turkey slices, dressing made with Pacific Organic Unsalted Chicken Stock, and the Pacific Organic Jellied Cranberry Sauce.  Each layer is a flavorful bite of Thanksgiving.

Toasted Almond Russian Tea Cakes

I am always baking cookies and pies for our family.  I LOVE baking for them.  BUT, THIS recipe for Toasted Almond Russian Tea Cakes is their ALL-Time favorite.

I know this recipe traditionally call for walnuts or pecans.  I am now allergic to both of those nuts.  So, I don’t purchase them very often. One Christmas baking season, I only had raw, sliced almonds. So, I thought I might as well give it a try. They have been the family fave ever since!!

Another thing about this cookie-I ONLY use REAL vanilla & butter. It makes all the difference in the flaky texture and buttery flavor.

Thankful at Home with Traditions

Healthy Popcorn Munch

Hello, Hello!!  AND Happy Halloween!  I am excited to be here today!  I have so much to tell you, including a recipe for my Healthy Popcorn Munch and an invitation!  You are gonna love it!!
First of all-have you already had too much Halloween candy??  Are you in the mood for a more healthy treat?  I have the perfect solution for you.
Healthy Popcorn Munch
Yep, it’s my recipe for Healthy Popcorn Munch.  And, it is SO delish!!  You will make it all year round for your friends and family.  It is also a great party appetizer.  So nummers that you NEED the recipe now, right??
Healthy Popcorn Munch
{Meegan’s Healthy Popcorn Munch}
Ingredients:
2 Tablespoons butter
1/4 cup honey
1 Tablespoon grated lemon peel
1/tsp cinnamon
1 bag popped microwave popcorn (or 1 cup popped popcorn)
3/4 cup dried cranberries
3/4 cup sunflower seeds
Directions:
Melt butter, stir in honey, lemon peel and cinnamon.  Drizzle over popcorn.
Toss gently.
Add dried cranberries and sun flower seeds.  Toss gently.
The lemon peel adds just the right amount of tartness to balance the sweetness from the honey.  You will gobble it up as soon as it is made.  That is a promise!
 
Whenever I am asked to bring a treat or snack to game night, a church meeting, or any social gathering-this is my go to recipe.  Healthy Popcorn Munch is a pleasant surprise.  And with these flavors combined, it is gone fast!
