BUT, I am so happy to be here today to share a family fave recipe-4 Ingredient Rice-a-Roni Meatballs.

This recipe is so yummy.  Perfect with pasta, rice, or even mashed potatoes.

I found the recipe when I was a new mom looking for a filling and delicious meal for my young family.  I am a scratch cook, so I was a little leery at first to make this.  BUT, it was perfect for our family and has been ever since.

Chocolate Peanut Butter Marshmallow Treats

Fall is the time when we start thinking about yummy comfort foods.  Some of them are savory and some are sweet. Today I am sharing a recipe for a sweet comfort food-“Chocolate Peanut Butter Marshmallow Treats”. This has long been a family fave.

No sooner do I pour it into a 8×8 dish, and it is gone! I am sure it will be the same for your family, as well.

My Garlic Broccoli and Shrimp Skillet Meal

Happy Wednesday.  Life is good. And, I hope you feel the same today, too!

I am happy to be sharing one of our all-time favorite meals today.  Do I say that every time?  Well, I mean it every time! I guess we just like food.  My garlic broccoli and shrimp skillet meal is quick, easy and only has 4 ingredients!  How much easier can it be??

Do you like broccoli?  Do you like shrimp? Do you like garlic?  If so, then this is the ideal meal for you!

EASY Summer Supper or Side Dish

{Meegan’s Garlic Broccoli and Shrimp Skillet Meal}

Ingredients:

1 dozen frozen shrimp (thawed)

3 heads broccoli (cut up)

2 cloves garlic (chopped)

3-5 Tablespoons Extra Virgin Olive Oil

On medium heat, warm pan add 3 Tablespoons Olive Oil

 Add chopped broccoli. Toss occasionally to avoid burning.

At this point you may need to add more olive oil, as the broccoli will absorb it quickly.

When the broccoli is tender, add garlic and shrimp.

The heat of the pan and broccoli with cook the shrimp until pink.

Toss often to avoid garlic burning.

When the shrimp is pink and the broccoli is bright green, your meal is ready.

This whole process will take about 15 minutes.

Voila!

A delicious and healthy meal in just minutes!

I’ve Got The Monday Blues For Comfort Food

Happy Monday Blues!!

Do you ever have one of those days, weeks, or months that everything goes a little haywire?  Life is going along just fine, and BAM!  Things change in a phone call or a Dr visit?  Yep, that is how this week was for me.  Our world got shaken up a little bit, but we are not knocked down.  It’s all good, and everything is going to be okay!  REALLY, it will.

With saying all of that-I’ve got the Monday Blues for some comfort food!  And I am thrilled to be sharing theses amazingly delish and comforting recipes with you.  They all look SO good to me, I could reach right through my computer screen and eat EVERY SINGLE ONE!!
