Good Morning!!  Since I am busy with the California grandkiddos this week, Amanda has offered to guest post for me today!  And, are you in for a real treat!!

Hey there! I’m Amanda from the blog Amanda Jane Brown, and it is a joy to be here at What Meegan Makes today! Meegan’s blog is a place I love to come to for inspiration…just a mere click to her page always takes me to a happy place. Thanks, Meegan, for having me today!

Over at Amanda Jane Brown, I blog about affordable ways to decorate for the seasons, everyday recipes, and family traditions. I’d love for you to stop by and say hello!

Today, I’m sharing a hearty Cheesy Corn Chowder perfect for these cold winter days. This soup makes a very large amount, so it’s great for a large group, a church potluck, or sharing with your neighbors!

Cheesy Corn Chowder

6 bacon slices, chopped

3/4 cup chopped onion

2 1/2 cups water

2 1/2 cups peeled, cubed baking potatoes

2 cups sliced fresh carrots

2 t. chicken bouillon granules (or 2 cubes)

3 cans (11 oz each) of gold and white corn (Green Giant makes a can with both)

1/2 t. salt (or to taste)

1/2 t. pepper

1/4 t. garlic powder

7 T. all-purpose flour

5 cups whole milk

3 cups shredded sharp cheddar

1 cup cubed Velveeta cheese

Optional at table: Hot sauce

Optional for topping: Cooked bacon bits, extra shredded cheddar

In a Dutch oven or large stock pot, cook bacon and onion over medium heat until onion is tender. Add water, potatoes, carrots, and bouillon and bring to a boil. Reduce heat. Cover and simmer for 15-20 minutes or until potatoes are tender.

Stir in corn, salt, pepper, and garlic powder. In a separate bowl, whisk together flour and milk until smooth. Add flour mixture to soup and bring all to a boil. Stir for a couple of minutes until thickened.

Reduce heat and add cheeses. Stir until cheese melts. Adjust seasonings to your taste!

Serves 15.

Cookies, Cookies, and More Cookies

Every night our neighbors leave a treat on the front door step is filled with cookies, cookies, and more cookies!  It has been so fun!  I love seeing the Christmas bags nicely decorated adorning our front step, then filled with delicious goodness.
