Cookies, Cookies, and More Cookies

Every night our front door step is filled with cookies, cookies, and more cookies!  It has been so fun!  I love seeing the Christmas bags nicely decorated adorning our front step, then filled with delicious goodness.

As promised earlier today, I want to share this new cookie with you. Cookies are my favorite treat at Christmas. What about you?

Last week I fiddling around in the kitchen with some new ideas for cookies to share during the holidays.  I love my own recipe for Toasted Almond Russian Tea Cakes. But this year I wanted to try something  just a little different.  I had fun “playing” while I came up with this recipe:

{Meegan’s Coconut Chocolate Cakes}

Mix thoroughly:

1 cup butter

1/2 cup powdered sugar

2 tsp coconut flavoring

Work in until dough holds together:

2 1/4 cups flour

1/4 tsp salt

1/2 cup shredded coconut

Roll dough by tablespoonfuls with 4-5 chocolate chips inside.  Place onto ungreased baking sheet.

Bake 10-12 minutes or until set but not brown.  While warm, roll the cookie in powdered sugar.  About 5 minutes later roll in sugar again.

Seriously like a  melted chocolatey, coconutty mouth of goodness.  YUMmmmmmmmm….
