September 5, 2024 By Meegan Leave a Comment

This Applesauce Zucchini Bread From Scratch is easy to make with less fat, using half the oil, and egg whites, thus more nutritious than most you have had. Not ONLY that, but it is so delicious. Your family will be wanting for more.

This recipe became a favorite treat shortly after my husband’s heart quadruple by-pass. With needing less fat in his diet, and cholesterol-THIS applesauce zucchini bread is baked often.

Whether or not you are looking for a zucchini bread that is more healthy, this is the recipe for you.

Applesauce Zucchini Bread From Scratch

Blend together until smooth:

2 cups sugar

1/2 cup egg whites or 3 whole eggs

1/2 cup vegetable oil

1/2 cup unsweetened apple sauce

2 teaspoons real vanilla

Fold in:

2 cups grated, unpeeled zucchini

Sift together:

3 cups all purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

Gradually fold wet and dry ingredients until completely combined.

You may also add chopped dates, raisins, dried apricots or your nut of choice.

Pour blended batter into a 10 inch buttered cast iron skillet or 2 buttered small loaf pans.

Bake at 350* for 1 hour.

Serve warm with butter or cream cheese.

This Applesauce Zucchini Bread From Scratch can be served with breakfast, brunch, dessert or a midnight snack. It also makes the perfect holiday gift for friends and neighbors.

I hope you enjoy this as much as we do. Happy Baking!
