My Lemon Truffle Chocolate Cake

August 20, 2013 By Meegan 9 Comments

I want to say it must have been about 25 yrs ago, I was watching Martha, yes THE Martha Stewart. She made a lemon cake with chocolate frosting. It looked so delish and inspired me to make my lemon truffle chocolate cake.  Why do I call it a truffle cake?  Because the flavors remind me of a See’s Candy lemon truffle.

60 Minute Cinnamon Rolls

December 22, 2012 By Meegan 3 Comments

Are you always feeling rushed Christmas morning to make breakfast?  These 60 Minute Cinnamon Rolls are the answer!!  They can be ready by the time the presents are unwrapped!

I start out by using my 60 Minute Yeast Roll recipe.  Super easy, even if you are not a bread maker-you will be able to make these.  I promise! This post was updated in 2025.

60 Minute Cinnamon Rolls

After the dough rises the first time, I roll it out in a semi rectangle.  (I am just not that good at making a true rectangle, like I should)  “Butter” the dough with 3 Tablespoons real butter, then sprinkle 3/4 cup mixed with 1 tsp cinnamon over the butter.  You may also add chopped nuts, dates, or raisins.

Roll the dough carefully, and slice into 1 1/2 inch slices.  Place on a greased baking sheet.  Cover with a towel and let rise for 15 minutes.

After they have risen, bake for 12-15 minutes.  Let cool for 1 minute, then frost with a mixture of 2 Tablespoons melted butter, 2 cups powdered sugar, and 1 tablespoon milk (or cream)

60 Minute Cinnamon RollsYour family will be very impressed!!  Freshly baked cinnamon rolls for Christmas breakfast with sliced oranges and a glass of eggnog??  I can’t think of anything better!

As Christmas is fast approaching, we will be busy with our family, friends and the grand kiddos.  Yay!!

Next week I will be posting:
