Gluten Free Apple Crisp

I enjoy cooking and baking, and now that the temps are slowing going down, I am ready for some comfort food. Namely, my Gluten Free Apple Crisp recipe.

I have teamed up today with some of the best cooks and bakers I know.  We are sharing OUR favorite comfort food recipes with you.Comfort Foods delicious sweet and savory recipes you'll want to makeJust wait until you see all the deliciousness! Anything from sweet to savory, from breads to cookie bars and everything else in-between.

One of my favorite Fall dishes is apple crisp. The tart flavor from the apples and sweet crisp topping, makes for a warm dessert, or even a diversion from the standard breakfast.

I love me some apple crisp any time of year.

Last year around this time, I discovered I am allergic to gluten. I felt like all of my meal plans were destroyed, until I did some research. I found rice flour, almond flour, gluten free baking mixes, etc…

With a few adjustments and experiments, I could still have the treats I had been eating for years. That is how I came up with a Gluten Free Apple Crisp recipe.

{Meegan’s Gluten Free Apple Crisp}

heat oven to 375*

4 cups tart apples (cored, peeled and sliced thin)

 2 Tablespoons of lemon juice

2/3 cup brown sugar

1/2 cup gluten free baking mix ( I use Arrowhead Mills or Bisquick)

1/2 cup rolled oats

3/4 tsp cinnamon

3/4 tsp pumpkin pie spice

1/3 cup butter, softened

Place sliced apples in an 8×8 inch lightly greased square baking dish.

Squeeze lemon juice evenly over apples.

Mix remaining ingredients thoroughly in a separate bowl.

Sprinkle over apples.

Bake 30 minutes or until topping is golden brown.

Serve warm and if desired, with light cream or ice cream

Serves 6.
