We all have family traditions, whether they be games we play, holidays celebrations, or food we eat. Orange Cupcakes from Scratch-A Spring Tradition were always on the menu.
Grandma would make these decadent orange cupcakes every Easter and Mother’s Day. It was a Spring tradition for us.
Since Grandma passed away years ago, I can’t help but want and make these orange cupcakes every Spring. This year is no different. I am excited to pass along the recipe to you as one of your new Spring traditions.
{Meegan’s Orange Cupcakes}
Heat oven to 350*
Combine ingredients in order given:
1 cup sugar
1 whole egg
2 egg yolks
1/2 cup real melted butter
2 cups all purpose flour
2 tsp baking powder
1 tsp salt
3/4 cup orange juice
2 tsp grated orange rind
Beat till well blended.
Pour into baking cups 1/2 full
Bake for 16 minutes or until cake pick is pulled out clean.
Frosting:
1 1/2 cups powdered sugar
4 T butter
1 tsp grated orange rind
1/2 tsp orange juice
1 T coconut milk
Frost when cupcakes are cool.
Pass them out to your family and eat them up!!

I imagine you think of her as you bake them. Grandmothers always make the best food! Mine is no longer with us and I cherish her recipes.
