Bean & Fresh Veggie Fajitas

I make my Bean & Fresh Veggie Fajitas with Bush’s Best Beans. This time I am using their delicious Cannellini Beans. I like them because they are hearty enough for a veggie meal.

Before I get started, I need to head to Walmart.  I usually keep my cupboard stocked. But after having so much company over the past few weeks, I have not been able to stock up my pantry. So, it’s off shopping I go.

For my Bean & Fresh Veggie Fajitas, I need a couple types of Bush’s Best Beans. I bought Red Kidney Beans and White Kidney Beans. Sometimes called Cannenilli beans. I also bought fresh onions, bell pepper, red pepper and corn tortillas to make my recipe for Bean & Fresh Veggie Fajitas.

Once I am home…I wash and slice the veggies. Then, cook them in a cast iron skillet with a tablespoon of olive oil. I cook the veggies until translucent or tender. Now, it’s time to add the Cannellini beans. I like them to simmer with the veggies to get all the spices and veggie flavors married together.

While the veggies and beans are cooking, I like to heat my corn tortillas on my gas stove top. The flame and heat give them the warm, charred flavor my family loves.

Now it’s time to put it all together. I like to top my Bean & Fresh Veggie Fajitas with cheese, avocado and sometimes sour cream.

When I was making my Bean & Fresh Veggie Fajitas for this post, I could not help but have one taste before I fed everyone else. The spices with the veggies and beans make for a delicious meatless meal.

Bean & Fresh Veggie Fajitas

Slice:

1 medium white onion

1 red papper

1 green bell pepper

 

Add spices:

1 tsp chili powder

1/2 tsp cumin

salt and pepper to your own taste

1/4 tsp red pepper flakes

1/2 tsp oregano

1 tsp Cajun spice  

salt and pepper 

Measuring everything to your own taste buds.

 

1 can Bush’s Best Cannellini Beans

 

1 dozen corn tortillas-Heat on stove top until slightly charred.

 

Cook veggies with spices in a cast iron skillet until translucent or tender. Add drained and washed Bush’s Cannellini beans and let simmer for 5-7 minutes.

 

Fill corn tortillas with 2 tablespoons cooked veggies and beans.

Top with favorite toppings such as salsa, avocado, sour cream or cheese.

Enjoy and share with family and friends.
