Do you have that ONE special recipe that your family asks for year after year at Christmastime? I am pretty sure our family has three, 4 or even 5 recipes that are their faves. Especially since we have seven kids, that means lots of variety and tastes. BUT, with that being said, it would not be Christmas in our family without Bing Crosby singing, “I’ll Be Home For Christmas” and my Christmas Finger Cookie Recipe.
These light finger shaped cookies are ALWAYS a big hit. Made from scratch? Absolutely! Real butter? Of course!
Let me share my Christmas Finger Cookie Recipe with you…
Preheat oven to 350*
Cream together, until smooth:
3/4 cup real butter
1 egg
3/4 cup sugar
1 1/2 tsp vanilla
Gradually add:
2 1/4 cups sifted all-purpose flour
1/2 tsp salt
1/2 cup flour (for rolling out dough)
For dipping:
6 0z chocolate chips, melted with 1 TBL real butter
1/2 cup crushed candy canes or peppermint candies
When dough is well blended, divide into four pieces. Shape each piece into a narrow 12-18 inch log. (The thicker the logs, the thicker the cookies. We like ours about the thickness of a real finger, so we roll them a little narrow.)
Cut “fingers” into 2 1/2 inch lengths.
Place on ungreased baking sheet about 2 inches apart. This leaves enough room as the cookie expands while baking.
Bake for 12-15 minutes, or until cookies are set.
Cool on wire racks.
Dip end of cooled cookies into melted chocolate and butter mixture.
Then roll in crushed candy cane bits.
This recipe makes 4 dozen.
