Easy Oven Fajitas

Don’t you just love Summer meals and delicious thirst quenching drinks?  That’s what Summer is all about, right? With that in mind, I prepared a Fresh & Easy dinner date for Hubby and me.  We love Mexican food, and chicken fajitas is one of our favorite meals.

I bought ALL of my ingredients for Easy Oven Fajitas and Raspberry Lemonade.Fresh & Easy Dinner Date

Don’t these fresh veggies look ready for eating?  Just what I need for my oven or grilled chicken fajitas.

Fresh & Easy Dinner Date

We are trying to eat more healthy, so I bought these boneless, skinless chicken breasts without added hormones or added steroids.

After cutting the chicken breasts and veggies into narrow strips, I added my spices: chili powder, cumin, salt, pepper, red pepper flakes, oregano, and Cajun spice.  Measuring everything to our own taste buds.

I tossed everything together with about 1/4 cup of  Extra Virgin Olive Oil.

I had my oven preheated at 400*.

Adding all of the chicken and veggies to a baking sheet, I baked it for 17-20 minutes, until the chicken was cooked through.

This same recipe can be adapted for your grill.  Just lay a sheet of heavy duty foil on your grill and cook your chicken and veggies with your grill nice and hot.

The grated cheese, the freshly made salsa, tomatoes, cilantro, sour cream and avocados were the icing on the cake.

To make this Raspberry Lemonade, I simply made frozen concentrate lemonade and added frozen raspberries found in the frozen section of the grocery store.  It was refreshing and a perfect balance with the fajitas.

And dessert, oh dessert. This moist chocolate cake melts in your mouth. Keeping with the raspberry theme, I added raspberries atop of our cake-Seriously heaven!

My Easy Oven Fajitas were a huge success!  Hubby took the leftovers for lunch.

    Mmmmm! I love fajitas and raspberry lemonade. And I know we both like dessert ;) I have never heard of Fresh & Easy…I wonder if there are any in Oregon…
