I have always been a coconut lover. Not only that…I like cream cheese, pineapple, fresh whip cream and pudding. If you are anything like me, then you will love this Hawaiian Delight Cake Recipe.
While searching through my recipe file, I saw this recipe and immediately remembered the flavors and textures combined. I knew you would want this Hawaiian Delight Cake Recipe.
Hawaiian Delight Cake Recipe
Ingredients
1 package white cake mix (bake as directed) I baked mine in 2-9 inch round cake pans. But this recipe also works beautifully in a 9×13 pan. I mixed my white cake mix only using egg whites. The cake came out similar to an angel food cake. My family LOVED it.
1 large package instant vanilla pudding
3 cups milk
1-8 oz cream cheese, softened
1-15 oz can crushed pineapple, drained
1 Pint Whip cream-whipped
2 Tablespoons powdered sugar
1 tsp vanilla
1/2 cup toasted coconut
1/2 cup toasted almonds-slivers or chopped
*Bake cake as directed and completely cool on cooling rack.
*Mix pudding as directed on package. Let set for 15 minutes. Add cream cheese and mix well.
*Spread half of the pudding/cream cheese mixture on cake
*Crumble 1/2 can drained, crushed pineapple over cream cheese mixture
*Top with 1/2 of the whipped cream-sweetened with powdered sugar and vanilla to your liking
*Sprinkle with toasted almonds and coconut
*Add second round cake layer on top
*Repeat layers
*Refrigerate until served
As you can tell, the cream cheese and pudding mixture is mixed until a smooth texture.
For a tip…Instead of using instant pudding, I used 6 lunch sized pudding cups. That will save a little time from making your pudding and then you won’t need the milk, either.
Once you are done with all the layers- “Frost” the sides of the cake with the pudding/cream cheese mixture.
