How To Make a Lemon Meringue Pie

Well hello there! It is a beautiful day here at our cottage in the desert. The Summer thunder storms make me happy. AND, PIE is another thing that makes me happy.

I am sharing my How To Make a Lemon Meringue Pie steps and directions.

I make EVERYTHING in this pie from scratch. No fillers, or substitutes here.

Not only that! It is National Lemon Meringue Pie Day today.

I want to show you How To Make a Lemon Meringue Pie.
Meegans Lemon Meringue Pie

When I was growing up, my mom and grandma made everything from scratch. That is how I learned how to bake. It isn’t hard, and the flavor is crisp, fresh and oh, so delish.

Pie Crust from Scratch by meeganmakes

I start out by making my own pie crust. I always hear others saying how hard a pie crust is to make, BUT, this comes out perfect everytime.

{Meegan’s Pie Crust}

1 cup flour

1/2 cup shortening

Mix with fork, until well blended.

Combine and add to flour:

1/4 cup milk

1/2 Tablespoon vinegar

1/2 tsp salt

Roll dough out on floured surface. Makes 1-9 inch pie crust

Pie Crust from Scratch

After the dough is rolled out and place in pie tin, use a fork to make holes in the crust. This will prevent crust from “bubbling” up and becoming deformed.

Lemon Pie Filling Ingredients

While your crust is baking make your lemon filling and meringue using the recipe below.

Making Meringue

Whipping egg whites for meringue can be tricky, but follow the directions completely and you won’t ever have unwhipped or runny egg whites.

Someone recently told me that if your bowl is completely clean, you will have perfect stiff, shiny peaks every time. It has worked for me.

Lemon Meringue Pie Fillings

Once your lemon filling is thickened, your meringue is whipped and your crust is baked, you are ready to “build” your pie.

Lemon Meringue Pie Directions

It is as easy as:

**fill your crust with your lemon filling

**top your hot filling with your meringue

**bake for 10 minutes or until meringue is lightly browned

    My favorite pie is apple pie with a crumb crust on top.

    A little secret when topping the lemon meringue, be sure to swirl the meringue to seal the edges of the crust. Otherwise meringue could leak. Old Pa. Dutch hint.

    My mom makes a caramel chocolate pie that will knock your socks off, but my favorite traditional pie is cherry with lots of whipped cream!!

    One word… YUM! Saving to make later. I love from scratch recipes and they are always better tasting and better quality than mass made. I think cooking like this is becoming a lost art. Thanks for sharing:)

    As to pie, my favorite is homemade coconut meringue pie–sometimes called coconut cream, but I’d never want it topped with whipped cream. Meringue all the way! :)

    Your pie looks delish! My favorite is coconut cream……..with whipped cream and toasted coconut shavings on top.
    I’d like to buy a new cast iron grill pan, but some new pantry storage containers would help me organize my pantry too!

    Banana cream is my favorite pie, but I like any cream pie, no matter what flavor.

    I would get a Hammock Swing for my front porch. It be be a lot more comfortable than the chairs we have.
