4 Ingredient Rice-a-Roni Meatballs

Hello and Happy Monday!!  Yay, I can share pictures again!!  My blog is going through a few changes, so I hope you will be patient.  It is going to be better than ever.  I know it’s Monday and time for the Monday Blues.  Those are right here.

BUT, I am so happy to be here today to share a family fave recipe-4 Ingredient Rice-a-Roni Meatballs.

This recipe is so yummy.  Perfect with pasta, rice, or even mashed potatoes.

4 Ingredient Meatballs

I found the recipe when I was a new mom looking for a filling and delicious meal for my young family.  I am a scratch cook, so I was a little leery at first to make this.  BUT, it was perfect for our family and has been ever since.

4 Ingredient Rice-a-Roni Meatballs
{Meegan’s 4 Ingredient Rice-a-Roni Meatballs}

Ingredients:

1 box beef flavored Rice-a-Roni

1 lb ground beef or ground turkey

1 1/2 cups warm water

1 egg

Combine in a bowl:

1 lb ground meat, 1 egg and rice from Rice-a-Roni box

Shape into 1 1/2 inch meatballs

Brown meatballs in a medium high skillet, until brown on all sides

Mix:

1 1/2 cups warm water and flavor packet from Rice-a-Roni box

Pour into skillet with browned meatballs.

Turn heat down to medium low, cover with a lid and simmer for 20 minutes.

Makes 12 meatballs.

4 Ingredient Rice-a-Roni Meatballs

Serve over a nice pile of rice or mashed potatoes.  Delish!!

Add a salad and a veggie, you have the perfectly balanced meal.  And, a great quick meal that everyone likes.  A real crowd pleaser.
