Cocoa Apple Spice Cake Recipe

The first time I made this Cocoa Apple Spice Cake Recipe was over 40 years ago for a neighbor at Christmastime. She LOVED it and couldn’t stop raving about it.

Since then, it is on my Christmas baking list.

The warm spices, chocolate chips and chopped pecans make it over the top moist and delicious.

I thought you would like the recipe as much as I do. So here ya go…

COCOA APPLE SPICE CAKE RECIPE

BEAT UNTIL SMOOTH:

3 eggs-room temperature

1 cup real butter-softened

1/2 cup water

*Beat together for 3 minutes. Continually scraping sides of mixing bowl.

SIFT TOGETHER:

2 1/2 cups all-purpose flour

2 Tablespoons cocoa

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon allspice

ON LOW SPEED ADD ABOVE INGREDIENTS TO CREAMED MIXTURE.

FOLD IN:

1 cup chopped pecans

1/2 cup chocolate chips

2 cups peeled and grated apple (I used Gala Apples, but I think Fuji apples would work well, too.)

1 teaspoon vanilla

Spoon into a greased and floured 10″ loose bottom tube pan OR into 2-10 inch cast iron skillets.

BAKE AT 325* for 60-70 minutes for the tube pan OR  25-30 minutes for a cast iron skillet.

CARAMEL GLAZE INGREDIENTS AND DIRECTIONS:

1/4 cup butter

1/2 cup brown sugar

1/8 cup milk

Melt in saucepan until boiling and slightly clear(ish)

Cool until lukewarm.

Add 1 1/2-2 cups confectioners sugar and 1 tsp real vanilla. Stir with fork or whisk until smooth. It will be slightly thick. If it gets too thick, add one teaspoon milk at a time.

Using a spoon drizzle hot glaze over HOT Cocoa Apple Spice Cake so that it can be absorbed and add even MORE flavor to an already moist cake.

SERVE warm in wedges or slices. Whatever YOU like.

When you take a bite into this Cocoa Apple Spice Cake, you will enjoy the chocolate chips, pecans, the warm cinnamon and allspice it is like eating a small slice of Fall or Winter goodness.

I hope you try this recipe soon and enjoy as much as our family does. Bake it as a loaf, tie with bakers twine for a lovely gift. It will be a wonderful addition to your next family party or brunch for a sweet treat.
