Applesauce Zucchini Bread From Scratch
Blend together until smooth:
2 cups sugar
1/2 cup egg whites or 3 whole eggs
1/2 cup vegetable oil
1/2 cup unsweetened apple sauce
2 teaspoons real vanilla
Fold in:
2 cups grated, unpeeled zucchini
Sift together:
3 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
Gradually fold wet and dry ingredients until completely combined.
You may also add chopped dates, raisins, dried apricots or your nut of choice.
Pour blended batter into a 10 inch buttered cast iron skillet or 2 buttered small loaf pans.
Bake at 350* for 1 hour.
Serve warm with butter or cream cheese.
