Chicken Thighs Cooked in Homemade Tomato Sauce and Peppers

If you asked me what my favorite food is, I would have to say comfort food. Whether it’s tacos, lasagna, soup or homemade rolls, it’s always comfort food. Today, I  am sharing my sharing my recipe for Chicken Thighs Cooked in Homemade Tomato Sauce and Peppers. Yep, you guessed it, comfort food.

Made with fresh ingredients and from scratch, it has GOT to be good, right?

Chicken Thighs Cooked in Homemade Tomato Sauce and Peppers

Ingredients:

4 large skinned chicken thighs, de-boned

2 tablespoons extra virgin olive oil

5 large beef steak tomatoes, chopped

1 green pepper, chopped

1 red or yellow pepper, chopped

1 medium yellow onion, chopped

1 tablespoon Italian seasoning

1/2 teaspoon dried parsley

1/2 teaspoon dried oregano

2 cloves garlic, minced

Parmesan rind (You can use any size for the flavor of your choice)

salt and pepper, to taste

red pepper flakes, to taste

Directions:

Brown chicken thighs with olive oil in a large skillet until golden brown on each side. About 3 minutes per side.

Remove chicken from skillet.

Add tomatoes, peppers, onion, garlic and seasonings to skillet. Sautee’ until soft and translucent. Stir often to avoid burning.

Once the vegetables are done, tuck chicken thighs into your skillet with the homemade tomato sauce.

Add the Parmesan cheese rind into the sauce.

Cover and cook approximately 40 minutes or until chicken is cooked thoroughly.

Serve with shaved Parmesan or Romano cheese and red pepper flakes.

You can pour these fresh, savory Chicken Thighs Cooked in Homemade Tomato Sauce and Peppers over pasta, or eat as is.

For a vegetarian version, serve the homemade tomato sauce over cauliflower mash, rice or potatoes.
