My Lemon Truffle Chocolate Cake

I want to say it must have been about 25 yrs ago, I was watching Martha, yes THE Martha Stewart. She made a lemon cake with chocolate frosting. It looked so delish and inspired me to make my lemon truffle chocolate cake.  Why do I call it a truffle cake?  Because the flavors remind me of a See’s Candy lemon truffle.

Have you had a lemon truffle from Sees? If not, this cake recipe will give a sample of the flavorful candy.

This recipe is a family favorite. Especially around birthdays, this cake is frequently requested.  The lemon paired with the chocolate sends you into chocolate/lemon heaven.

You know how much I love lemon, right?  That is what makes this cake so special. It’s the lemon filling in the center. Oh man!  Like I said chocolate/lemon heaven.  That tiny bit of tartness from the lemon filling and the sweetness of the homemade chocolate buttercream is just the right combo for a slice of goodness.

{Meegan’s Lemon Truffle Chocolate Cake}

Ingredients:

1 lemon cake mix (baked in 2-9 inch cake pans) Following baking directions on the box

my lemon filling recipe , completely cooled

Almond Cocoa Frosting:

Ingredients:

3 cups confectioners sugar

1/3 cup real butter (softened)

3 Tablespoons unsweetened cocoa

2 tablespoons milk (may need a little more)

1 tsp pure vanilla extract

1/2 tsp vanilla

Directions:

Using the whisk attachment on your electric mixer, blend confectioner sugar, cocoa, and butter.

Slowly add milk, almond extract, and vanilla.  mix until light and creamy.

When the cake has completely cooled,  frost with a thin layer of chocolate buttercream frosting on bottom layer.  On top of the chocolate frosting, “frost” lemon filling.

Place second layer on top and frost whole cake with chocolate buttercream frosting.

You can decorate the cake with lemon slices, fresh flowers or greenery, if desired.

Cut yourself a slice and taste the creamy, tender and tangy flavor of my lemon truffle chocolate cake.
