Italian Turkey Meatloaf

Hey everyone! It is a great day for some Italian Food isn’t it? As a matter of fact, I think everyday is a great day for Italian food. Everything from pastries, pasta and even my own recipe for Italian Turkey Meatloaf.
I have been making it for years and my family loves it. It is filled with veggies, spices and even a little red pepper fakes for a spicy kick.
Italian Turkey Meatloaf from Scratch
I would love to share the recipe with you. Because I know YOUR family will love it too.

Italian Turkey Meatloaf

{Meegan’s Italian Turkey Meatloaf}

Pre-heat oven to 375*

Serves 6.

Bind together in a large mixing bowl:

1 lb ground turkey

1 small onion chopped

1/2 cup red pepper sliced

1/2 cup green bell pepper

1/2 of 1 zucchini (sliced thin)

1 Tablespoon Italian seasoning

1 tsp Mrs Dash (original)

1/2 tsp black pepper

1/2 tsp garlic powder

1 egg

1/2 cup raw oats

1/2 can tomato paste

Make a loaf shape and place in a loaf pan or in a pie tin. If you choose to bake your Italian Turkey Meatloaf in a pie tin, be sure to add 1/2-1 inch of water for your meat loaf to cook in. (This is an old family trick that my mom used when we didn’t own a loaf pan.) It works fabulously.

Bake for 40 minutes. At that time take out of the oven and “frost” the Italian Turkey Meatloaf with the other half can tomato paste. Bake 10 more minutes.

Once your Italian Turkey Meatloaf has rested sprinkle with fresh Parmesan cheese.

Best served with brown jasmine rice, and roasted asparagus. Although a serving of homemade pasta on the side would be a perfect pairing.

This Italian Turkey Meatloaf is also great the next day as a meatloaf sandwich. That is how my hubby likes it best.

    I have never thought of adding zucchini to meatloaf, sounds great. I love that you used oats instead of bread crumbs, making it a gluten free meal. Thanks!
