It’s Wednesday already! It’s a fab week so far. The weather is still HOT here, and that means more pool time for me. Yay! I really do love Summer time. While it’s hot outside I like to eat cool and refreshing meals. One of them is Mediterranean Avocado & Tomato Salad.
With fresh garden ingredients, this is a great addition to any meal, or as a meal itself.
The first time I ate Mediterranean Avocado & Tomato Salad was while I was helping my mom after her hip replacement. It became a fast favorite.
It couldn’t be more simple to make.
{Mediterranean Avocado & Tomato Salad}
Ingredients:
1 Diced Avocado
1 1/2 cups Cherry Tomatoes (or sliced tomatoes, which ever one you prefer)
2 Tablespoons Cold Press Olive Oil
The juice from half a Meyer Lemon
1 1/2 teaspoons green taco sauce
Salt and pepper to taste
Toss and serve cold
It can be served before your entree as an appetizer or with your meal.
It’s light, healthy, refreshing and full of Mediterranean flavors.
Mediterranean Avocado & Tomato Salad is my new “go to” salad. I think it will be for a VERY long time.
When I ask Hubby what he wants for a snack or salad his reply is ” Can you make, you know, that avocado, tomato split thing?” WHO knows how he came up with that name. (Hehehe) At least I can interpret his language AND he likes it as much as I do.
