Oatmeal Honey Chocolate Chip Cookies

I love to eat cookies!  Working and experimenting in my own kitchen, I developed this recipe for Oatmeal Honey Chocolate Chip Cookies, I knew they were just the right cookie for me.

Oatmeal Honey Chocolate Chip Cookies

The honey, added with the brown sugar adds just the right amount of creaminess and sweetness I like in a cookie. Mmmmm…Mmmmm…

Who knew that this Oatmeal Honey Chocolate Chip Cookie Recipe would become  family favorite.

The ingredients are simple sand most of them are found in any bakers kitchen.

{Meegan’s Oatmeal Honey Chocolate Chip Cookies}

Preheat oven to 300* F.

In a medium bowl combine:

2 1/4 cups flour

1 tsp baking soda

1/4 tsp salt

1 cup oats 

Mix well with wire whisk.

In a large bowl blend with an electric mixer:

1 cup dark brown sugar

1/2cup granulated sugar

1 cup salted butter (softened)

2 Tablespoons honey

Scrape down sides of bowl then add:

2 large eggs

2 tsp vanilla extract

Beat at medium speed until fluffy and combined

Add the four mixture and 1 cup chocolate chips (you can also add 1/2 cup chopped pecans)

Blend at low speed until just combined.  Do not over mix.

Drop by rounded tablespoons onto ungreased cookie sheet 1 1/2 inches apart.

Bake 18-20 minutes.

Immediately transfer cookies with a spatula to a cool, flat surface or cooling rack.

You could even make a double batch for sharing.
