My recipe for Raspberry Cream Sandwich Cookies was inspired by my love of shortbread and fresh raspberries.
When I received the box filled with colorful, new kitchen utensils, I could hardly wait to get baking.
Raspberry Cream Sandwich Cookies Recipe
Cookie Ingredients:
1 cup butter, softened
2 cups all-purpose flour
1/2 cup sugar
1 cup finely chopped pecans
Blend butter and sugar until creamy.
Gradually add flour until a ball is formed. If dough is too dry, add whole milk, 1 teaspoon at a time.
Add in chopped pecans until evenly distributed.
Roll out dough 1/4 thick on a lightly floured surface.
Cut into 1 1/2 inch circles.
Place on ungreased baking sheet.
Bake 10-12 minutes at 350*.
Raspberry Filling Ingredients:
1/4 cup butter, softened
1 cup powdered sugar
2 teaspoons fresh raspberry pulp, without seeds
Cream butter and powdered sugar until creamy.
Add 2 teaspoons of raspberry pulp
Beat until light and creamy. Add a teaspoon of milk if the filling is too stiff.
Chocolate Topping Recipe:
6 ounces semi-sweet chocolate chips
2 tablespoons butter.
Melt on double boiler until chocolate is smooth and shiny.
Chopping the pecans on my new cutting board and my sharp knife from Thyme and Table could not have been easier.
Once the cookies are baked and cooled, you are ready to make the Raspberry Cream Sandwich Cookies.
Using my spatula and measuring spoon from Thyme and Table came in handy. Each one is colorful and a great way to incorporate a professional look in my kitchen.
The BEST thing? We can now purchase Thyme and Table products at Walmart. Quality and convenience are always a priority for me. I am sure they are for you, too.
