Skillet Breakfast Overload

I can not wait to share my Skillet Breakfast Overload recipe with you. Are you ever wanting a breakfast all in one dish? Something savory, with lots of flavor? Well this most certainly is all of that. It is full of fluffy eggs, cream, and spice. Delicious goodness all in one dish!

My Skillet Breakfast Overload is full of fluffy eggs, cream, and spice. Delicious goodness all in one dish!

Skillet Breakfast Overload

Ingredients:

2 Tablespoons Olive Oil

6 eggs (cage free), scrambled

1/2 lb bacon, chopped and cooked (I like turkey bacon. That is why I add the olive oil))

2 red or golden potatoes,cooked and sliced

1/4 cup chopped red onion

1/4 cup green chopped bell pepper

salt and pepper to taste

Toppings:

1/2 cup shredded cheddar cheese

1 avocado sliced

1/3 cup salsa (your choice)

3 Tablespoons sour cream

2 Tablespoons chopped green onion

Serves between 2-4.

Directions:

Heat olive oil in a cast iron skillet on medium heat.

Add chopped onion, bacon and bell pepper. Cook until tender or translucent.

Add potatoes. You can bake them in the oven or microwave while the onions, bacon and peppers are cooking, if desired.

Continue to saute’ veggies, bacon and potatoes until a little crispy.

Scramble eggs in a small bowl.

Gradually add eggs to veggie mixture.

Scrape skillet bottom while continuing to cook eggs.

Once the eggs are cooked through, you are ready to serve.

Serve with any or all the topping listed above. I personally like to top mine with shredded cheddar cheese, salsa and sour cream topped together. Oh, and I LOVE adding a few avocado slices, too. YUM!
