Coconut Tres Leches Cake-A Holiday Treat

Are you looking for a Holiday treat that tastes delish and feeds a crowd??  Well, I have just the recipe for you!!  When I think of Tres Leches Cake, I don’t think of coconut.  BUT, this recipe I am sharing today has coconut and coconut milk in it. (One of my fave flavors)

Super easy and deliriously good.

Coconut Tres Leches Cake

{Meegan’s Coconut Tres Leches Cake}

Ingredients & Directions:

Preheat oven as directed on cake mix box.  Generously butter and flour a 9×13 pan.

-Mix 1 white cake mix as directed on box (eggs, oil, water)

Add to mixed batter-1 cup toasted, shredded coconut(leaving a little coconut left for garnish), and 1 1/2 tsp coconut flavoring

Bake as directed on box-in a 9×13 pan

Meanwhile, whisk together the “tres leches” (three milks)

1 cup whipping cream

1 can sweetened condensed milk (14 oz)

1 can coconut milk (13.75 oz)

As SOON as the cake is removed from the oven pour milk mixture all over the hot cake.

Let cake cool completely in pan on a wire rack.  Cover cake with plastic wrap and refrigerate at least 5 hours and up to 8 hours.  During this time the cake will absorb the milk mixture.

Just before serving, whip 1 cup heavy whipping cream until soft peaks form, and spread over cake.

Top with extra coconut and serve with berries.  IE; fresh strawberries, raspberries, blue berries, etc…

This has become one of our family favorites. The coconut milk and coconut makes the flavor and adds to the moister.

You KNOW I have a large family, and this is an ideal dessert for any time of year. At Christmas or even during the Summer.
