One of our favorite times during the Holidays is Christmas brunch. We have biscuits and gravy, bacon, eggs, french toast, egg nog and Raspberry Filled Muffins. They seem to be the thing that all the kids want. I make them from scratch. They are light and filled with the sweetness of raspberries, then topped with a sugary glaze. Mmmm..So yummy.
I am usually pretty tight lipped about this recipe, but I think everyone needs to have it in their file. Especially for family gatherings.
The aroma from my freshly baked Raspberry Filled Muffins will fill your home and your families comfort food cravings.
Since I don’t have my home made freezer jam, I am gong to use Sweet Creek Raspberry Spread.
Occasionally I will make the same recipe using blackberry spread. But, my family like raspberries over any other berry. So, that is what I will go with today.
{Meegan’s Raspberry Filled Muffins}
Ingredients:
1/3 cup shortening
1/2 cup sugar
1 egg
Mix thoroughly, until creamy and smooth.
Stir in:
1 1/2 cups flour
1/2 tsp salt
1 1/2 tsp baking powder
1/4 tsp nutmeg
Alternating with:
1/2 cup milk
Fill muffin cups 1/3 with batter.
Add 1 tsp. raspberry spread over batter.
Cover raspberry spread with 2 Tablespoons batter. Make sure the top is sealed so it doesn’t “ooze” out.
Bake at 350* for 20-25 minutes
While the Raspberry Filled Muffins are baking, make a glaze with:
1 cup powdered sugar
1 Tablespoon whole milk
When your muffins are done, pull them out of the oven.
Immediately spoon the glaze over the Raspberry Filled Muffins.
(This recipe makes between 7 and 10 muffins)
Your muffins are now ready for serving. They are a perfect addition to any breakfast, brunch or even an afternoon snack. I know there isn’t much nutmeg in the recipe but it adds just the “kick” the batter needs.
AND, with the wonderful raspberry spread, it is a perfect pairing for a fresh, made from scratch muffin.

Your recipes look delicious! I’m trying to bring up the recipe for Honemade Biscuits from Scratch and the Vegetable , Bacon , Egg Cups, but I cannot get the recipes to come up, only pictures.
