Using Fresh Berries for an Appetizer, Dinner, and Dessert

 I have three, yes, 3 of my own dishes that say Summer from the very first bite in honor of National Berry Month! Using Fresh Berries for an Appetizer, Dinner, and Dessert you can make a whole Summer meal.

Driscolls and Rios de Chile

My 3 main ingredients were Rios de Chili Wine, Driscoll’s berries, and Endive lettuce.

  Using Fresh Berries for an Appetizer, Dinner and Dessert

For an appetizer, I chose something that is sweet and bitter to your palette.

Using both white and red endive leaves as cups, I filled them with 2 raspberries and a chunk of fresh blue cheese.

Each bite if full of flavor, and makes your mouth ready for dinner.

For a fresh Summer dinner I made Grilled Chicken in a Wine & Raspberry Reduction.

Ingredients:

1 1/2 cups Rios de chile wine

1/4 cup unsalted butter

*simmer until reduced in half*

add the juice from 1 lemon

1/2 tsp lemon zest

1 cup fresh Driscoll’s raspberries

1 tsp brown sugar if desired

pour over grilled chicken

serve with fresh lemon slices

 For a delicious and fresh Summer berry dessert, serve strawberries dipped in sour cream and brown sugar.

This is also along the lines of sweet and tangy flavors.

Recipe:

1/2 cup sour cream

sprinkle 1 TBLS brown sugar over sour cream

dip fresh Driscoll’s strawberries in sour cream and brown sugar.

The sweet and tangy flavors will make your mouth say “Summer”.

Now you have 3 Summer fresh recipes to celebrate National Berry Month.

Grilled Chicken with Wine and Raspberry Reduction Sauce

And, fresh strawberries dipped in sour cream and brown sugar.
