I like pasta. Do YOU like pasta? I think it is one of my favorite carbs-well, besides bread, right? Anytime of year, place or event-Pasta is a great way to complete a meal. ESPECIALLY my Bow Tie Pasta Salad with Lime Dressing Recipe.
Can you say Yummy? Oh yes. Crowd pleaser? Yes! Easy? Yes! You need the recipe right?
Well, I am more than glad to give it to you.
{Bow Tie Pasta Salad with Lime Dressing Recipe}
8 0z bow tie pasta-cooked, drained and cooled as instructed on package
1 medium green bell pepper, cut into short, narrow strips
1 medium red pepper, cut into short, narrow strips
1 to 1 1/2 cups frozen corn kernels
2 medium tomatoes finely diced
1 large avocado, pitted peeled and diced
Juice of 1 lime
3 Tablespoons chopped cilantro
1 half medium red onion finely diced
2 Tablespoons olive oil
2 Tablespoons red wine vinegar
1 tsp ground cumin
Salt and pepper to taste
In a large serving bowl, combine peppers, corn, tomatoes, cilantro, red onion and pasta.
In a small bowl whisk together vinegar, cumin, salt, pepper and lime juice.
Pour over pasta mixture, add avocado. Toss pasta mixture gently, but thoroughly.
(This is the vegan version, BUT if you would like a heartier salad add 1-1 1/2 to 2 cups cooked pinto beans or kidney beans.)
My Bow Tie Pasta Salad with Lime Dressing Recipe is a great balance of tangy and crisp. This is also a tasty side dish for your next Bar-b-Que. I made it this past weekend for a family reunion, and it was gobbled up by everyone.

This sounds so amazing! I made something similar with beans instead of pasta but am very excited to try it. I think this would be a great idea for a cookout this summer. Also something that you can tweak based on what you have lying around the house.
