As I browsed through my blog, I realized that I have not shared my Brown Sugar Muffins From Scratch recipe with you. It is a staple in our home and they make any breakfast or brunch special.

These are always a crowd pleaser, with lots of flavor.
And, of course, they are made with real butter, cage free eggs and pure brown sugar.
Brown Sugar Muffins From Scratch
Ingredients:
Batter:
1/2 cup real butter (softened)
2 eggs
1 cup brown sugar
Beat until light (brown) and fluffy (about 2 minutes)
On low speed, gradually add 1 cup whole milk
Add:
3 Cups flour
1 tsp salt
3 tsp baking powder
Mix until just combined.
Fill muffin tins 1/2 full.
Crumble Topping:
1/2 cup brown sugar
1/2 cup flour
2 Tablespoons cinnamon
4 Tablespoons butter
1/2 cup raw oats
Blend until crumbly. (I use my hands, but you could use a fork or pastry blender)
Add about 2 Tablespoons of crumble topping to each muffin, before baking.
Bake at 375* 20-25 minutes
When you pull them out of the oven the fresh aroma will fill your home with the Fall season and a cozy feeling of home.
The crumble topping isn’t too sweet and is a great texture for these already tasty muffins.
Top them with butter and eat ’em up.
