Italian Shepherd’s Pie Recipe

October 18, 2018 By Meegan Leave a Comment

This time of year, I am always craving real comfort food. That is why I like to make my Italian Shepherd’s Pie Recipe, from scratch.

This recipe full of fresh Italian spices, ground turkey and lots of Parmesan cheese. Plus, I like to bake mine in a cast iron skillet. Now who could resist that?

Italian Shepherd’s Pie Recipe

Pre-heat oven at 400*

Ingredients:

1 lb ground turkey (or ground beef, if you prefer)

1/2 red onion, diced

3/4 cup diced green and red pepper, combined

2 Tablespoons olive oil

2 small cans tomato sauce

1 can, green beans, drained

1 tsp Italian seasoning

1/2 tsp fresh parsley, minced

2 cups mashed potatoes

1/3 cup sour cream

1/2 cup shaved Parmesan cheese

salt and pepper to taste

Directions:

*Saute’ onions and bell peppers in 2 tablespoons olive oil until tender.

*Add ground turkey and cook with veggies and seasonings until brown and cooked thoroughly.

*Boil red potatoes until tender. Mash until creamy with salt, pepper, and sour cream.

*Add green beans to ground turkey mixture. Cook 10 minutes until flavors are combined.

*Pour ground turkey mixture into 12 inch cast iron skillet.

*Top with hot potatoes, evenly.

*Sprinkle with shaved Parmesan cheese.

*Bake at 400 for 30 minutes until hot all the way through and cheese is slightly brown.

Serve hot with a green salad, hot rolls or freshly made biscuits.

You can make this Italian Shepherd’s Pie Recipe in under an hour. It’s ideal on a cold night. Your family will be asking for more.

Enjoy! And let me know how much you like it.
