I love me some comfort food. Especially if it’s a sweet treat. This Cast Iron Skillet Coffee Cake from Scratch is a perfect fit for this kind of craving.
From the fresh real butter, to the sour cream, to the cinnamon and sugar-It’s a winner every time!

Cast Iron Skillet Coffee Cake from Scratch
Coffee Cake Batter Ingredients:
3/4 cup real butter, softened
3/4 cup granulated sugar
2 fresh organic eggs
1 teaspoon vanilla
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup fresh sour cream
Directions for batter:
In a mixing bowl, combine butter, granulated sugar, 2 eggs, and vanilla until smooth.
Gradually add all purpose flour, baking powder, baking soda and sour cream until completely combined, without over-mixing
Ingredients for cinnamon sugar filling and topping:
1 cup granulated sugar
1 1/2 teaspoons ground cinnamon
3 Tablespoons melted butter
Using an 8 inch cast iron skillet, completely butter bottom and sides.
With half of the batter, fill pan bottom with batter.
Sprinkle 3/4 cup of cinnamon and sugar mixture on batter in the pan
Pour and gently spread the rest of the batter over cinnamon and sugar mixture
Drizzle 3 Tablespoons of melted butter over the top, completely covering the top
Shake the rest of the cinnamon and sugar mixture over the melted butter
Bake for 40-50 minutes in a 350* oven. *Baking time depends on your oven
Check with a toothpick, sticking it in the middle of your coffee cake, while still baking. If toothpick comes out clean, your coffee cake is done.
