I have a new favorite sandwich. It is so yummy and super easy to make with only 4 ingredients. If you are looking for a refreshing Summer sandwich, why don’t you try my EASY Cucumber Finger Sandwich Recipe?

Cucumber Sandwich Recipe

I had never made a cucumber sandwich before. Have you?

It was much more easy and flavorful that I thought it could be.

Easy Cucumber Finger Sandwiches

Here are the ingredients for my EASY Cucumber Finger Sandwich Recipe:

6 oz whipped cream cheese

2 Tablespoons fresh chopped dill

10-15 thinly sliced cucumber (I use a mandolin)

white bread with the crusts sliced off

cookie cutters in various shapes. IE; hearts, diamonds, rectangles

optional: salt or pepper to taste and/or onion salt ( I didn’t use any seasons, but season it to your own taste)

(Makes 6 whole sandwiches)

Cut crusts off of white bread slices.

Mix in a bowl: chopped dill, whipped cream cheese, until completely blended.

Slice cucumber.

Spread cream cheese mixture on white bread. Layer with cucumber slices. (However many you like)

Slightly spread a small amount of cream cheese mixture second layer of bread.

Place on top of face up sandwich.

Using cookie cutters cut each sandwich in a fun and creative shape.

Tea Party Food

Place a spring of dill on each sandwich when serving like I did at my tea party. These sandwiches are delicious served with fresh fruit, veggies and other finger sandwiches like chicken salad and egg salad. They are the perfect cool sandwich for a hot summer day.

I have really enjoyed making this new and EASY Cucumber Finger Sandwich Recipe. WE make it at least once a week around our house, now. The crisp cucumbers and the dill combined with the cream cream-so yummy! Let me know what you think. What other types of finger sandwiches do you like?
