Eggless Spice Cake with Brown Sugar Frosting

If you like you bake like I do you will definitely need this Eggless Spice Cake with Brown Sugar Frosting in your recipe file.

I received this years ago when my father-in-law was allergic to eggs. Come to find out, my husband is, too!

This cake is the perfect remedy for a sweet, caramel, spicy treat. Whether you are allergic to eggs or not. Made completely from scratch-even better!

The Eggless Spice Cake with Brown Sugar Frosting is fairly easy to make. But does take a few more steps than your cake mix type cake.

With that being said, let’s get started.

Eggless Spice Cake with Brown Sugar Frosting

Ingredients and Directions For Cake:

1 3/4 cup flour

1/2 tsp salt

1 tsp soda

1/2 tsp baking powder

1 tsp cinnamon

1/2 tsp allspice

1/4 tsp cloves

Sift altogether and set aside.

 

Cream together until smooth:

1/2 cup real butter

1 cup brown sugar

1 cup whole milk

 

Gradually pour in sifted dry ingredients with creamy ingredients. Mix until everything is blended well and smooth.

Pour into 2 round (floured and greased)-8 inch cake pans

Bake at 350* for 40-50 minutes Keep an eye on your cake while it’s baking. If baked too long, it will be dry, because it doesn’t have eggs.

 

Frosting Ingredients and Directions:

1/2 cup butter

1 cup brown sugar

1/4 cup milk

Melt in saucepan until boiling and slightly clear(ish)

Cool until lukewarm.

Add 2-4 cups confectioners sugar and 1 tsp real vanilla. Stir with fork or whisk until smooth. It will be slightly thick. If it gets too thick, add one teaspoon milk at a time.

Frost cake AND frosting are both still warm. This will allow the cake to “absorb” the frosting flavors and keep the cake moist.

**SIDE NOTE**As you can see in my photos, I only frosted the middle and top layers of my cake. This was my choice for a rustic style dessert. There is plenty of frosting for a layered cake.

Serve warm with a cold glass of milk, tea or your favorite beverage.

This is ideal when you want cake but have run out of eggs. It is a moist, light cake, and full of warm spices. The brown sugar frosting is almost like eating candy. Rich, buttery and creamy.
