Gluten Free Fat Free Banana Muffins

Having my recipe for Gluten Free Fat Free Banana Muffins is one of our favorite breakfast treats.  It’s healthy, fresh, gluten free and fat free.  I like using applesauce, instead of butter as a leavening.  It adds moisture and a great texture.

 

Gluten Free Fat Free Banana Muffins

{Meegan’s Gluten Free Fat Free Banana Muffins}

2 cups gluten free all purpose baking mix

1 1/2 cups ripe bananas (3 medium), mashed

1/2 cup organic apple sauce

1/4 tsp salt

1 tsp baking powder

2 eggs

1 tsp baking soda

1 tsp cinnamon

1/8 tsp nutmeg

3/4 cup sugar

nuts are optional (I like to add toasted almonds)

Preheat oven to 350*F.  Blend all ingredients together and mix well.  

Pour batter into muffin cups 2/3 full.  

Bake for 30-35 minutes depending on your oven.

Done when an inserted toothpick comes out clean.

My Gluten FRee Fat Free Muffins have been a staple for breakfast and snack time since I found out I was gluten intolerant, and since hubby had his open heart surgery.

Right out of the oven with butter or butter spread, these are a delightful addition to any breakfast.  Can you already taste them???

I KNOW they will become a staple in your home as well, after trying them just one time.
