I am writing you today from my daughters home in Utah! I flew up yesterday to help her pack to move to Georgia. I will also drive with her across the country to her new home with 4 of our grand kids. What an adventure, right?

Okay, NOW onto the real reason you are here. This recipe is another family fave.
My Pistachio Pineapple Pudding Recipe is the perfect balance to a savory meal. It has the fluffy sweetness that everyone likes at the end of a meal.
Since St. Patrick’s Day is coming along with Spring meals and Easter-this is a delicious addition that will become a family fave for your family as well. It’s a fantastic blend of sweet, tart and a little crunch.
{Meegan’s Pistachio Pineapple Pudding Salad}
1 package pistachio pudding (instant)
1-15 oz can crushed pineapple (not drained)
1 small container cool whip
1 bag-12 oz bag mini marshmallows
chopped pecans (optional)
This recipe couldn’t be easier. Pour each ingredient in a large bowl. Fold together until well blended. Be sure the pudding is completely mixed thoroughly, so it’s not “grainy”.
