When visiting my grandma in Texas years and years ago, she wanted to make her neighbors a cake. But, she didn’t have any butter or powdered sugar. Within minutes she whipped up one of the lightest and fluffiest frostings I had ever had. I have been using her Easy Meringue Frosting in Minutes From Scratch ever since.
This is one of those recipes that become a “go to” in your recipe file. When you are crunched for time, out of powdered sugar or just want something unique for a special occasion-this is what you need.
Let me share grandma’s recipe for Easy Meringue Frosting in Minutes From Scratch:
Ingredients:
2 egg whites
1/2 cup granulated sugar
3 Tablespoons light corn syrup
2 tablespoons water
1/4 teaspoon cream of tartar
1 teaspoon real vanilla
Directions:
In small sauce pan, pour in granulated sugar, corn syrup and water.
Stir until sugar has dissolved. Cook on medium/high heat until bubbling.
Stir and cook at bubbling for two minutes.
While waiting for the sugar mixture to bubble, whip (with a hand mixer or stand mixer) the 2 egg whites and cream of tartar until there are stiff peaks.
*Make sure your bowl is perfectly clean. Otherwise your egg white mixture will fall and not whip up-then you will be sad.*
Once the sugar mixture has cooked for two minutes, GRADUALLY add to egg whites, whipping continuously. Pour hot sugar mixture in a steady, slow stream. This helps keep volume and texture smooth.
Whip for one full minute while slowly pouring in vanilla. Continue to whip until your mixture is light and fluffy.
This is plenty for 18 cupcakes or an 8 inch layered cake.

As a funny side note:
My Grandma was 87 when she showed me this recipe. As mentioned above, she wanted to make the cake for her neighbors. Once her cake was baked and frosted, she asked me if I would deliver the cake for her. I willingly obliged. Grandma’s asked, “Meegan, will you please deliver the cake to the ‘old couple’ next door?” I laughed so hard! Because the couple were just a few years older than her-the husband was 91 and the wife 90. It’s all about perspective, isn’t it?
