Chicken Broccoli and Rice Recipe

Do you have a recipe that is memorable in your family? Maybe it’s spaghetti, a Sunday roast or even orange cupcakes?

Each recipe has a core memory in our lives, doesn’t it? Yet, sometimes it’s nice to change it up a little while still remembering those happy times.

That’s what I have done with this Chicken Broccoli and Rice Recipe.

It’s the kind of comfort food everyone asks for with a few added ingredients. Perhaps Grandma didn’t have around or wasn’t in her budget. AND it is updated for everyone to enjoy.

{Not Your Grandma’s Chicken Broccoli and Rice Recipe}

Preheat oven to 350*

Ingredients:

*1 1/2 cups cooked chicken, shredded (I used a store bought rotisserie chicken)

*2-cups COOKED rice (Jasmine rice is what my family likes, but use what YOU prefer)

*1 head of broccoli, chopped and cooked to a texture YOU like

*1-can cream of chicken soup

*6 oz cream cheese

*3/4 cup whole milk

*1/2 cup sour cream

*1/2 cup mayonnaise

*2 TBLS yellow mustard

*1 whole egg

*1 1/2 cups grated sharp cheese

*2 chopped green onions-for garnish

*Black pepper to taste

Supplies:

*9×13 glass dish

*Hand mixer

Directions:

-Shred chicken

-Toss with cooked rice and broccoli

-Blend mayo, cream cheese, egg, milk, sour cream and mustard with an electric mixer or by hand.

-Gradually combine/toss with shredded chicken, rice and broccoli

-Spread in a 9×13 glass dish

-Sprinkle grated cheese on top

-Bake at 350* for 40 minutes until bubbly around edges

-Sprinkle with fresh chopped green onions and cracked black pepper

This Chicken Broccoli and Rice Recipe is some of the best comfort food you might ever have. As a main dish with a salad, as a side dish with turkey or beef roast, and SO good as leftovers for lunch.
