With organic eggs, fresh asparagus and organic whole milk, how could you go wrong?
First off, I LOVE asparagus and eggs combined. Sometimes, I crave it. I head to the the store with my grocery list in hand, and before I know it eggs and asparagus have hopped into my shopping cart.
I really like it that much.
So, with that being said, let me share with you my own Crustless Asparagus Quiche Recipe.
Preheat oven at 375*
Ingredients:
5 large organic eggs
3/4 cup organic whole milk
1 cup sharp cheddar cheese (shredded)
1/2 cup Parmesan cheese (shredded)
2 Tablespoons flour
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp pepper
1 bunch fresh organic asparagus (washed and cut into 1 inch pieces)
1/4 cup chopped onions
4 Tablespoons butter
Directions:
Melt 2 Tablespoons butter in a hot cast iron skillet.
Toss in cut asparagus, and chopped onions. Constantly stirring-Sauté until tender. About 5-8 minutes.
Whisk eggs, milk, flour, baking soda and spices until well-blended. (NO lumps)
Generously grease ALL sides and bottom 9 inch GLASS pie plate with 2 tablespoons butter. Sprinkle grated Parmesan cheese on the bottom of the pie pan.
Combine sauteed asparagus, onions and cheddar cheese with egg mixture.
Carefully pour egg mixture into pie plate.
Bake for 20-25 minutes, or until eggs are cooked completely.

The Asparagus Crustless Quiche was amazing and just wanted to let you know! One thing I would change for next time will be to only use the top 1/3 of the asparagus spears (stems were too tough and stringy) and omit the salt. But be assured that this recipe will be made again and again! Husband even loved it and I worried a bit as there was no meat. But he went back for seconds!! We had this for supper, by the way. A nice change from the usual. Thank you Meegan!

I wanted to add that organic makes all the difference! I normally buy as much organic as I can, so in this case I did have the organic eggs and milk on hand. It’s a much better flavor and sooooo much better for our health and I would like to see more people get on the organic bandwagon! You will notice the upgraded quality of everything you cook!!

I see 1/2 tsp baking soda in the ingredients but not mentioned in the directions. I’m guessing it goes in at the same time as the flour???
