Delicious Fresh Fruit Breakfast Recipe

Are you ever looking for a NEW recipe for breakfast?  I ALWAYS am.  I want something without too much sugar or too many carbs. Sometimes it is hard to find a balance, isn’t it?

Well, I have a SUPER simple idea for you- a Delicious Fresh Fruit Breakfast Recipe.

Filled with apples, bananas, raw oats, pecans and shredded coconut, this is a great way to start your day.

 

This breakfast only has a few ingredients. Not only that, but you probably have all of them in your fridge or pantry already.

My Mother-in-law would eat this almost daily basis for breakfast.  At first, when I saw her making it, I thought, “Um, no thank you, gross.”  BUT when I tried it-It quickly became a mainstay breakfast in our home.

Delicious Fresh Fruit Breakfast Recipe:

Ingredients:

1 -2 apples, chopped

1 whole banana, sliced

1 handful chopped pecans

1 1/2 handfuls old fashioned oats-uncooked (not quick cooking)

1/4 cup shredded coconut

Directions:

Using a large spoon, gently mix all ingredients in a bowl.

This could easily serve 2.  BUT, I can eat this whole mixture myself.  That’s how much I like it.

When are kids were still at home, we would make this for them occasionally.  They weren’t too keen on eating raw, uncooked oats.  But most of them didn’t mind at all. Rather than make them eat what they didn’t like-we would make each bowl specific for each child’s likes and dislikes.

Sometimes they would like scrambled eggs, english muffin or pancakes on the side.

Believe it or not, this will fill you up fast. Each flavor from the individual ingredients compliment each other very well.

Try switching up the variety of apple you use, as well.  If you are in the mood for a tart and sweet flavor, try using a Granny Smith apple sometime.  Depending on the time of year, Fuji or Red Delicious apples are our favorite.

Rather than pecans, you can also use sliced almonds or chopped walnuts. Whatever you like, use it. If you don’t like coconut, don’t add it.

That’s what’s nice about this recipe, you can change it up to YOUR likes and taste.
