When you find a recipe that’s at least fifty years old, why not try it and maybe even improve upon it, right? My grandma’s coffee cake is one of those recipes for me. Today I am sharing my version of her Pineapple Pecan Coffee Cake with Caramel Glaze.
And I must say, it turned out much better than I could have imagined.
From the crushed pineapple and the freshly made caramel glaze, it is heavenly.
Oh! And did I mention this deliciousness is made from scratch? Yep! It doesn’t get much better than that, does it!
Pineapple Pecan Coffee Cake with Caramel Glaze
Ingredients for Coffee Cake…
Sift all together:
2 cups sifted all purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
Add:
1/2 cup chopped pecans
You may also add 1 cup raisins. We don’t like raisins, so I didn’t add them.
Combine:
1 beaten egg
1 teaspoon vanilla
2 Tablespoons REAL melted butter
And add to dry ingredients
Dissolve:
1 teaspoon baking soda into 1 small can, (undrained) crushed pineapple.
Let set for 30 seconds to activate the soda in the pineapple juice
By hand, mix the dry ingredients and egg mixture with the pineapple, until all are well blended and moist.
Pour into a well greased 8 inch cast iron skillet.
Bake in a 350* oven for 20-25 minutes depending on your oven.
Turn out on a cooling rack.
Glaze Ingredients and Directions:
1/4 cup butter
1/2 cup brown sugar
1/8 cup milk
Melt in saucepan until boiling and slightly clear(ish)
Cool until lukewarm.
Add 1 1/2-2 cups confectioners sugar and 1 tsp real vanilla. Stir with fork or whisk until smooth. It will be slightly thick. If it gets too thick, add one teaspoon milk at a time.
Using a spoon drizzle hot glaze over HOT coffee cake so that it can be absorbed to make a moist cake.
Serve with a cold glass of milk or your favorite hot beverage.
I baked this coffee cake last weekend for our Sunday brunch. It was requested this past weekend, again. Needless to say, it is a BIG hit with our family.

My Aunt makes a similar coffee cake and it was my absolute favourite. I gave up sugar years ago, but still make an exception for her coffee cake. So tempted to try your version in cast iron!
