Our family loves treats. Does your family, too? I mean we love treats so much that (sometimes) we have Oat Cranberry and Almond Bars for breakfast.
Of course they are a treat. BUT, with a big glass of cold milk-they are a quick half way healthy meal as you are running out the door.
You noticed I said “half way healthy”, right?
Well…
That’s because if you eat pancakes, waffles or even muffins they are just as sweet as my Oat Cranberry and Almond Bars.
Let me give you the recipe and you can see for yourself.
Oat Cranberry and Almond Bars
Ingredients:
1 cup all purpose flour
1 cup raw oats (I think raw oats work best, but if you only have quick or minute oats, they work, too.)
3//4 cup light brown sugar
1/4-1/2 tsp baking soda ( I have used either and I like 1/2 best. But you might be fine with 1/4.)
1/4 tsp salt
3/4 cup melted REAL butter
1/4 cup dried cranberries
1/4 cup sliced almonds
Directions:
Combine flour, brown sugar, and oats.
Gradually add melted butter.
After well combined and smooth, add baking soda and salt.
Then mix in dried cranberries and sliced almonds.
Press into an 8-10 inch cast iron skillet.
Bake at 350 for 20-30 minutes or until golden brown around the edges. This makes a soft oat bar. Bake a little longer for crunchy Oat Cranberry and Almond Bars.
The combination of the dried cranberries and sliced almonds give the perfect chewy, crunch texture.
See what I mean about a treat for breakfast? We also like Apple Crisp or Oatmeal Bars for breakfast, too. YUM!
My kids actually like to crumble their Oat Cranberry and Almond Bars in a bowl and cover them with whole milk. SO good!
