Summer Cole Slaw with Poppy Seed Dressing and Cashews

It’s nice to be with you on this hot, humid day. It has been hot and rainy most of the week here in Vegas.  Don’t get me wrong-I LOVE the Summer rain. BUT, it does keep me out of the pool with the lightening storms.  Boo!

One good thing about the weather is that I crave fresh veggies and fruit.  What your favorite Summer “go-to” recipe?  Mine is Summer Cole Slaw with Poppy Seed Dressing and Cashews. Yummy!

This recipe is fresh, crisp, sweet and salty all in one bite.

My friend, Stephanie gave me this recipe and it could NOT be easier.  She brought it to a party and all of us attending went crazy over it.  It has been a “go to” Summer recipe for me ever since.

Summer Cole Slaw with Poppy Seed Dressing and Cashews

1-head shredded cabbage

3-grated large carrots

1-bottle Brianna’s Poppy Seed Dressing (OR the Poppy Seed Dressing of your choice)

1-cup salted cashews

Toss well and keep chilled until served

How easy is that!

This recipe is great for Summer gathering, pool parties, or even as a mid-day snack.  It’s also a way to get your veggies in for the day.
