I enjoy Summer veggies don’t you? That’s why I love this end of Summer Veggie Skillet Meal. It is a great hit every time I make it. No matter who I make for. With the freshness of the Summer veggies and the melted cheese, who could resist, right?
This End of Summer Veggie Skillet Meal is a great “go-to” meal when you are at a loss for a dinner idea. It’s quick, easy and, oh, so fresh. Did I mention, fresh?? It has protein from the cheese and all the veggies you need for a healthy meal.
{Meegan’s Summer Veggie Skillet Meal}
Ingredients:
2 yellow squash, sliced
1 green bell pepper, sliced
1 white onion, chopped
12 cherry tomatoes
2 cups frozen corn, thawed
1 1/2 cups cheddar cheese
3 TBL extra virgin olive oil
Sauté onion, bell pepper and squash until onions and squash are translucent on medium high heat.
While pan is still hot add tomatoes and corn.
Sprinkle with cheese.
Cover with skillet lid for 5 minutes.
Take off heat and serve it up.
Season to taste.
If you don’t have yellow squash, zucchini is a delicious substitute. With the veggies delicately sauteed, the tomatoes warmed just right, and the melted cheese, it is a flavor-filled Summer veggie skillet meal.
I can also see this skillet meal paired with Mexican or Italian meals. It would be a perfect side dish for a pan of scrambled eggs and salsa. I think it would be delish on a bed of pasta, too.
