My Stuffed Avocado

Oh my goodness!  Avocados are one of my favorite foods, and so I made something the other day that Hubby and I love!!  My Stuffed Avocado is something that is filling as a meal on it’s own, served with a salad, or maybe even serve this as an appetizer.   It is a perfect pair with chicken or fish, too.   No matter how you serve this, you will bite into a mouth full of delicious goodness.

My Stuffed Avocado

{Meegan’s Stuffed Avocados}

Preheat oven to 375*

Ingredients

2 avocados halved and pits taken out

Mix in a medium bowl:

1 cup chunky salsa

1/2  cup Italian bread crumbs

1/2 cup grated cheddar cheese

1/2 tsp garlic powder

3/4 tsp Italian Seasoning

salt and pepper to taste

Mix together until the bread crumbs are moistened.

Fill each avocado half with salsa/ bread cumb mixture.

Top with bacon bits (optional)

Bake for 7 minutes or when cheese has melted on an ungreased cookie sheet.

Enjoy!!!

Baked Lemon Swordfish

If you know me at all, you will remember, I love lemon, don’t you?  There is something about the tangy flavor of a lemon that makes everything better. From cakes, cookies and even when cooking fresh fish. And that’s why I love my Baked Lemon Swordfish.  It comes out tender, moist and the lemony flavor is just perfect.

The real key to this recipe is that the fish is wrapped in foil and baked in the oven.

Nine Super Bowl Sunday Treats

Are you needing some Super Bowl Sunday Treats??  Well I have 9 yes, Nine  Super Bowl Sunday treats!!

Nine Super Bowl Sunday Treats

Lemon Butter Snowdrops

French Silk Pie

Coconut Tres Leches Cake

Caramel Corn

Homemade Pizza

Coconut Chocolate Snow Balls

Coconut Cream Pie (recipe below)

Caprese Salad

Lemon Cream Pie with Raspberries

{Meegan’s Coconut Cream Pie Recipe}

Mix together:

3/4 cup sugar

2Tbls flour

2Tbls cornstarch

1/2 tsp salt

Add:

2 1/2 cups milk 

Then pour in a pan

Cook over medium heat until thickened and starts to boil.

Boil 1 minute, stirring constantly.

Add:

4 egg yolks

For tempering:

add about 1/2 cup hot milk mixture to egg yolks, so they won’t curdle

Boil gently for 1 more minute

Stirring contantly.

Take off stove.

Add:

2 Tbls butter

1 tsp vanilla or 1/2 tsp coconut extract

Add:

1 cup sweetened coconut

Pour into baked pie shell.

Top with whipped cream and toasted coconut

Eat up and enjoy!!
