Easy Orange Cake Recipe From Scratch

It is really nice to have you here today. With all the Fall decorating going on, I thought you might like a fresh dessert idea, too. This Easy Orange Cake Recipe From Scratch is from my dear neighbor, Lois.

Lois taught high school “Homemaking Class” in the 60s and 70s. We were invited to her home to dine with her. Of course, the meal was delicious and balanced. The final course was her Easy Orange Cake Recipe From Scratch.

Lois’s Orange Cake Recipe From Scratch is light, fresh and yes, REALLY easy to make.

Easy Orange Cake Recipe From Scratch

Ingredients:

1 white cake mix (bake as directed on box) OR an Angel Food Cake

2 eggs, well beaten

1/2 cup granulated sugar

1/2 cup orange juice

1/2 cup orange rind

1/8 oz. carton Cool Whip (I used 1 cup REAL whipped cream, slightly sweetened with confectioners or powered sugar)

Combine eggs, sugar and orange juice in saucepan. Cook over low heat, stirring constantly, until thickened about 4 minutes.

Add grated orange rind and cool.

Fold Cool Whip (or fresh whipped cream) into cooled orange mixture.

Spoon over slices of white cake and/or angel food cake.

As you can see from my photos, I decided to frost one layer of a white cake with the whipped orange frosting.

If you want to frost a 2 layer cake, double the orange frosting recipe. This will give you plenty of frosting to cover both layers.
